Our 6th Edition has been carefully matured at Killara Distillery in Richmond, Tasmania, since 2019. With only 166 bottles available, this limited release reflects a patient, handcrafted collaboration with acclaimed Mornington Peninsula artist Emma Morgan, renowned across Australia for her evocative native floral and wildlife paintings. This edition also honors the expertise of Killara Distillery, an award-winning distillery deeply rooted in Tasmania's rich whisky-making tradition.
This unique expression was drawn from a single 100-litre French Oak, Ruby Port Cask from the Douro Valley Wine Region in Portugal, masterfully crafted by Tasmanian coopers, before making its way to Killara Distillery in Richmond. The expression has been crafted from the finest locally sourced Tasmanian single malt barley, imbued with Kristy Booth-Lark at Killara Distillery’s artisanal craftsmanship, then hand-bottled at cask strength 65% ABV, without chill-filtering.
COLOUR
Raw Jarrah Honey and whisky barrel aged maple syrup
NOSE
Salted Lakento roasted almonds, hot toasted chestnuts, and a freshly baked danish pastry with singed peaches
PALATE
Intense fig and candied honey Christmas cake. Malted butterscotch cookies with sea salt. Warm and numbing layers of date syrup, brown sugar, orange peel and maple glazed streaky bacon. Seductive, rich and decadent mouthfeel leaves the tongue wanting.
FINISH
The complexity and delightful warmth plays, lingers and entices, drifting into the chest in this tongue soaking gluttony.
