Our 5th Edition has been five years in the making. With only 154 bottlings, this release has been patiently and personally crafted in collaboration with celebrated Tasmanian contemporary artist David Booth; and the award-winning Old Kempton Distillery in Tasmania
This unique expression was drawn from a single 100-litre Pinot Cask, coopered for Rare Cask Society in Tasmania, then matured on the Western wall of Old Kempton Distillery’s bond store. An old stable which provided shelter to 22 horses when Dysart House was a coaching inn during the mid-1800’s. The expression has been crafted from estate grown, floor-malted barley at Old Kempton, then hand-bottled for Rare Cask Society at cask strength 60.2% ABV, without chill-filtering. The casks were lovingly nurtured at Kempton, Tasmania since 2018.

Brooding Banksia raw honey and dark Baltic amber
NOSE
A complex and balanced aroma with Rubra frangipani, sun muscats and torn, worn leather..
PALATE
Initially Arnott’s malt biscuits, cara cara orange peel, wild black walnuts. Followed by an intense and complex infusion of dried apricots, Floricane raspberries and nashi pear; with subtle hints of oak and mixed spice. A smooth and lingering mouthfeel.
FINISH
A classic Pinot finish with ripe blackberries, cassia bark and cloves, showcasing the elegance of classic Tasmanian Pinot Noir
